Build Your Own Veggie Pizza
My kids are super picky eaters. So I am always trying to come up with creative ways to "trick" them into eating healthy foods they would normally shy away from. All kids love pizza, and love making things, so when I let my kids make their own veggie pizzas loaded just the way they wanted it they both were so excited to eat the pizza they didn't even stop to think about all the veggies they were about to eat.

How We Did It
I started by taking the kids grocery shopping with me and letting them choose all of the vegetables they would want to try. If your kids are super picky, like mine you may have to suggest a few or pick up some they didn't choose, we used broccoli, cauliflower, bell pepper, tomato, cucumber and carrot (which I shredded to make it easier to eat) I tried to stay "kid friendly" in flavors so I wouldn't scare them from ever trying something again. Chop them all up in bite size pieces.
Then I gave each kid their own pizza crust. Using a pre-made ready to go crust that was one serving size. A pita pocket would work well if you can't get a pizza crust. The kids started by spreading their sauce of choice, my 5 year old wanted Ranch Dressing and my 3 year old stuck with what she knew and used red pizza sauce.
Then I let them loose with the selection of veggies right in front of them. I encouraged them to try at least two different veggies. My picky 3 year old stuck to just 2, while the 5 year old went crazy and tried them all.
