This recipe just takes a few ingredients, but is a meal in itself and my kids love it! You can use any kind of tomato sauce you like, or even make your own. Start by preheating the oven to 350 degrees.
Next, it was time for the kids to get involved. To make the filling, we added the entire 15 ounces of ricotta to a mixing bowl.
Along with the ricotta, put the egg, parsley, 1/4 cup of the mozzarella and a little salt and pepper into the bowl. We have a pair of children's scissors that we keep in our kitchen. It is a great safe tool for cutting fresh herbs.
Now, for my daughter's favorite part--mixing! She mixed it up with a spoon until the ingredients were well combined.
We topped it with the remaining mozzarella cheese and covered our dish with foil. Into the oven it goes, for 1 hour covered and 15 minutes uncovered.
